  • 1 Litre high fat milk
  • 1 cup alphonso mango, chopped
  • 2 pinch of saffron
  • 2 tsp ghee
  • 2 tsp vinegar
  • 4-5 tsp sugar
  • For mango cream for topping:
  • 1/2 cup mango pulp
  • 4 tsp cream


1. Split the milk into two equal halves. Separate pans should be used to keep both sections boiling.

2.Once boiling, add one part vinegar to one part milk; once split, add cold water. In a strainer, spread muslin cloth. Pour in curdled milk to separate the chena. Pour some additional water on top to thoroughly remove the vinegar.

3.Add saffron to the remaining milk (which will be used for reduction). Cut the second section in half. Combine it with chenna. Mix in the diced mango and sugar. Reduce the mixture until it reaches a thick consistency. To the mixture, add 2 tsp ghee.

4.You may put the kalakand mixture on any of the steel stray/thali with ghee. Garnish with pistachio slivers. Once it has cooled slightly, cut it into pieces. You may also put it in a pie mould. Place it in the refrigerator to cool.
