1. Sooji Besan Cheela Recipe

Cheela is a savoury food that resembles a pancake that may be cooked with many types of batters. The goodness of besan and sooji are present in this cheela. The cheela is given a delightful crispness by sooji or rava. You’d want to make this dish again and again since it comes together so quickly and tastes so well.

Ingredients of Sooji Besan Cheela

  • 1/2 Cup sooji
  • 1/2 cup besan
  • 1/2 cup curd
  • 1 onion , chopped
  • 1 tomato, chopped
  • 1-2 Green chillies
  • 1 tsp garlic (crushed)
  • to taste salt
  • to taste red chilli powder
  • for garnishing coriander leaves

HOW TO MAKE IT

1.To produce a smooth batter, pour some water into a dish with the curd. Add some salt, besan, and sooji. Give it a 20–15 minute break.

2. Combine the onion, tomatoes, green chilies, garlic, and red chilli powder in the same bowl. If extra salt is required, add it.

3. Heat some oil in a flat pan. A ladleful of the batter should be poured in the centre and swirled to form a thin pancake.

4.Cook till light brown on both sides. Serve warm.

2. Palak Puri Recipe

These palak puris, which are puffy, crispy, and green, are well-liked throughout North India, including regions of Uttar Pradesh, Haryana, and Delhi. These puris are popular with both children and adults, and they can make children want to eat spinach. Just a dish of curd or pickles and these luscious puris would do the trick.

Ingredients of Palak Puri

  • 2 Cups whole-wheat flour
  • Water (to knead)
  • 2 tsp ghee
  • to taste salt
  • Oil (for deep frying)
  • Puri press
  • Ground spinach

HOW TO MAKE IT

1. Before adding the water, combine the ground spinach with the dough.

2. Mix the flour with the “ghee,” salt, and water to form a firm dough.

3. Wrap the dough in plastic and let it rest for at least 30 minutes.

4.About 1/8″ of puris should be rolled out.

5.Pour the puri into the hot oil when a piece of dough immediately rises to the surface.

6. It will immediately rise; gently touch the middle with the back of a slotted spoon to make it puff up.

7. Flip it over and continue frying until both sides are light golden.

8.Remove from the fat and place on a piece of absorbent paper before placing on a serving plate.

3. Gobhi Paratha Recipe

Ingredients of Gobhi Ka Paratha

  • 2 Cups whole wheat flour (made into dough)
  • 1/2 cup ghee
  • For the Filling:
  • 2 cups cauliflower, grated
  • 2 tbsp coriander leaves, chopped
  • 1 tsp ginger, finely chopped
  • 1 tsp green chillies, finely chopped
  • 1 tbsp salt
  • 1 tbsp lemon juice

HOW TO MAKE IT

1. Divide the dough into tiny pieces, form them into spheres, and then press them flat.

2.Place some of the gobhi mixture in the centre and pinch the borders to make a cup.

3. Moisten the edges, then gather them to encompass the filling. Squeeze to seal.

4.To smoothen the packed ball, spread it out as thinly as possible without ripping it by dipping it in dry flour and rolling it out like you would a chapati.

5.Place one parantha over the extremely hot tawa, then turn the heat down.

6. When the edges begin to lift, make a trail of ghee on the surface and along the parantha’s outer edge.

7.Serve hot once both sides are browned.

4. Masala Anda Bhurji Recipe

  • 3 tsp salt
  • 2 tsp turmeric powder
  • 2 tsp chilli powder
  • 1 1/2 tsp pav bhaji masala
  • 1 tsp coriander stems
  • 1/2 cup tomatoes, chopped
  • 4 Eggs
  • Coriander leaves

HOW TO MAKE IT

  1. Pick up a pan and add oil to it.
    1. To the pan, add butter, garlic, green chilies, and ginger.
    1. Till they get golden, give them a good stir.
    1. Add chopped onions and curry leaves to the pan and cook together.
    1. Salt, turmeric powder, red pepper flakes, and Pav bhaji masala should all be added.
    1. Add chopped tomatoes and coriander stems on top before combining it with other ingredients in the pan.
    1. The eggs will now be added to the pan and vigorously whisked until done.

  • 3 tsp salt
  • 1 1/2 tsp turmeric powder
  • 1 1/2 tsp red chilli powder
  • 1 tsp garam masala powder
  • 1 tsp coriander leaves
  • 1/2 tsp garam masala powder
  • 1 cup gram flour
  • 2 tsp red chilli powder
  • 2 tsp salt
  • 1 tsp turmeric powder
  • 1/2 tsp ajwain
  • 1/4 cup rice flour
  • 2 paneer slices

HOW TO MAKE IT

  1. Oil should be heated in a pan.
    1. Add hing, curry leaves, and mustard seeds. Stir just a bit.
    1. Mix in the ginger paste and green chilies.
    1. Salt, turmeric powder, red chilli powder, garam masala powder, and coriander leaves should be added to the pan with the cooked potato.
    1. These are completely combined to create a thick filling in the pan.
    1. Take a bowl and fill it with rice flour, water, ajwain, turmeric, red chilli powder, and gramme flour.
    1. To create a liquid dip, vigorously stir it.
    1. Take some paneer and season it with salt and red chilli powder.

  • For Paneer Toasty:
  • 4-6 paneer slices
  • 2 tsp tamarind extract
  • 1 tsp sweet chilli sauce
  • 2 tsp mint sauce
  • 1 tsp chaat masala
  • 4 Bread slices
  • 10-20 gms butter
  • 1 onion, julienne
  • 1 tomato, sliced
  • to taste salt
  • 2-3 Kashmiri chillies
  • 2-3 Garlic cloves
  • 2 tbsp refined oil
  • For Salsa:
  • 1 Tomato
  • 1 spring onions, chopped
  • 1/4 capsicum, chopped
  • 2 tbsp sweet corn
  • 1 Green chilli
  • to taste salt
  • 2 tsp Indian mustard
  • 1 bunch fresh coriander
  • 1 tsp tomato ketchup
  • 1 Lime
  • 2 tbsp raisins

HOW TO MAKE IT

1. Combine chaat masala, sweet chilli sauce, tamarind essence, and mint sauce in a bowl. Combine them thoroughly.

2.Toast the bread with butter.

3. Add sliced tomatoes, julienned onion, and salt to taste to the bread.

4.Apply the paneer on the bread after dipping it in the mixture.

5.Add a few fried garlic cloves and Kashmiri chilies to the bread.

6. Apply refined oil to the toast to prevent sticking before sealing the bread.

7. Once both sides of the bread have been toasted, your Paneer Toasties are ready to be served.

For Salsa:

1. Combine tomato, spring onions, capsicum, sweet corn, green chilli, salt, Indian mustard sauce, fresh coriander, tomato catch-up, lime, and a few raisins in a dressing dish.

2. Gently combine them together, and your paneer toasty salsa is ready to consume.
