HOW TO MAKE IT

1.Make a powder out of the poha. Set aside.

2.Boil the potatoes and mash them.

3.Mix in the powdered poha and the remaining ingredients (excluding the oil, maida, and rice flour). Mix using your hands. This will prevent the creation of any lumps.

4.Mix in some maida and rice flour to make a soft dough.

5.Roll a tiny roundel into a long cylindrical form. To make this procedure go more smoothly, add some oil.

6.Cut the cylinders into the required sizes. Place in the freezer for 15 minutes.

Ingredients of Margherita Pizza

  • For Pizza dough:
  • 500 gms flour
  • Salt
  • 300 ml tepid Water
  • 7 gms dried yeast
  • 1/2 tsp sugar
  • 30 ml olive oil
  • Extra virgin olive oil
  • For the topping:
  • Passata sauce
  • 1 cup Mozzarella cheese, grated
  • Handful of basil leaves
  • Pepper
  • Extra virgin olive oil

HOW TO MAKE IT

Prepare the pizza dough:

1.Sieve flour with salt, then add yeast and sugar to lukewarm water. Set aside for 6–8 minutes.

2.Make a well in the centre of the flour mixture and add 100 mL of the yeast mixture and 15 mL olive oil.

3.Combine the remaining yeast mixture and olive oil.

4. Flour the kneading surface to prevent the dough from sticking.

5.Mix with your fingertips until you have a dough. Knead for 10 minutes, or until the result is elastic and uniform.

Proving the dough:

1.Place the dough in a bowl and generously sprinkle with extra virgin olive oil.

2.Cover the bowl with cling film and set it in a warm location for 50 minutes to proof.

3.After proving the dough, squish the air out and cut into tiny pieces for individual pizzas.

4.Before rolling out the dough, flour the work surface and rolling pin.

Prepare the topping:

1.Preheat the oven to its highest setting and dust your baking sheet.

2.Roll out the freshly produced pizza dough with a rolling pin and lay it on the tray.

3.Spread a thin layer of passata sauce on top, then top with mozarella cheese and basil leaves.

4.Place the baking pan in the oven for 10 to 12 minutes.

5.Remove the pizza from the oven and sprinkle with extra virgin olive oil and pepper.
