  1. Khandvi Recipe

  • 2 sasirch (dried whole red pepper)
  • 4-5 Kadhi patta (curry leaves)
  • 1 tbsp hara dhania (coriander leaves) chopped fine
  • 1/4 cup coconut, grated

HOW TO MAKE IT

1. Fill a deep, heavy-bottomed pan with flour (the pan should be large, as there is a lot of spurting while cooking).

2. Combine salt, ginger-chilli paste, chilli powder, heeng, and haldi. After incorporating a little amount of yoghurt at a time to create a lump-free, smooth paste, add the water.

3.Set the pan over high heat and bring to a boil while constantly swirling (to avoid scorching).

4.Continue to cook and stir until you attain a paste-like consistency, adjusting the heat as necessary to prevent burning.

5.You can tell it’s done when you use a stirrer to separate some of it from the rest and the bottom of the pan starts to gradually cover it (if it gets covered immediately, it is too thin). Spread a teaspoon of the batter on an ungreased surface as another test; when cold, it should come off clean.

6.Using a rubber spatula, spread the mixture as thinly as possible on an ungreased surface and allow to cool.

7.Add the sarson, kadhi patta, and sabut lal mirch to the hot oil in a small pan. Spread over the layer after a brief period of stirring. Pick up the lal mirch and set aside, then top it with all but 1 tbsp of the coriander and 1 tbsp of the coconut.

8. Cut this layer into strips and coil each strip tightly without breaking it into a scroll.

9. Set them out on a serving platter. Add the remaining coriander, coconut, and peppers as garnish. Serve.

2.Dhokla Recipe

2. Place the fruit, salt, or baking powder in a glass. Pour this mixture into the dhokla mixture after adding water to it.

3.Pour the mixture into the steaming tin after greasing it with two drops of oil. Steam food for 15 to 20 minutes, or until done.

4. Add oil, mustard seeds, curry leaves, and red pepper flakes to a pan. Let it cough.

5.Add the tadka to the dhokla that has been ready.

6.Divide into portions and serve.

3.Fafda Recipe

Using gramme flour, turmeric, and carom seeds, this classic crispy snack is produced. It is served with chutney, is fried crisp, and has the appearance of a thin wafer. It could be an excellent substitute for normal potato chips.

  • 2 cups besan (chick-pea flour)
  • 1/4 tsp baking soda
