- 1 russet potato, approximately 15 oz
- 1/4 tsp salt
- 1/8 tsp pepper
- 4 oz Butter, unsalted & melted
- 2 tbsp vegetable oil, for frying
HOW TO MAKE IT
- Start shredding the potato after peeling it.
- Put the potato shreds in a strainer and pour cold water over them.
- This is done to wash the potato of extra starch.
- Continue until the water begins to flow clean.
- Using a cheese cloth (or any other suitable material) or your hands, squeeze the water from the potatoes over the washbasin to remove it.
- Add salt and pepper, then place in a bowl.
- Some of the butter and oil should be added to a medium-heated pan. As required, add the remaining butter and oil.
- Flatten the potatoes with a spatula after adding them. An inch or so thick.
- Potatoes should be divided into chunks and turned over one at a time after the bottom is crispy.
- Until brown, cook.

- Change the dough hook’s attachments, then knead the dough for five minutes at medium-low speed. When the dough passes the windowpane test, turn off the mixer, let it rest for 10 minutes, and then knead it again for 2 minutes on medium-low speed.
- The dough should be rolled into a ball, put in the mixing bowl, and wrapped in plastic. Allow it to proof in the refrigerator for no more than 24 hours, but no less than 8 hours. The dough should expand throughout this phase by a factor of two.
- Give it an hour to rise in a warm location.
- For convenience and precision, use a bench scraper and a kitchen scale to punch down the dough and divide it into 12 equal pieces. - In a medium bowl, mix all the ingredients until well combined.
- Spread the topping liberally over the bagels.

- Dissolve the yeast in the milk mixture in a large mixing basin.
- Add the eggs, 3 cups of flour, salt, and sugar; mix thoroughly.
- 12 cup at a time, add the remaining flour, stirring thoroughly after each addition.
- When the dough comes together, turn it out onto a surface that has been lightly dusted with flour and knead for 8 minutes, or until it is smooth and elastic.
- Place the dough in a sizable mixing basin and lightly oil it before turning it to coat it.
- Cover with a moist towel and let rise in a warm location for approximately an hour, or until it has doubled in volume.
- The dough should be deflated before being rolled into a 10 by 14-inch rectangle on a lightly dusted surface.
