Panini with Leftover Chicken Recipe: A light and filling sandwich with chicken parts, peppers, rocket leaves, an eggplant-tomato chutney, and everything nice.
Ingredients of Panini with Leftover Chicken
- 3-4 chunks of leftover boneless chicken, sliced
- 1 ciabata loaf / any bread
- 1 tbsp olive oil or mustard oil
- 2 tbsp onions, sliced
- 2 tbsp bell peppers, sliced
- 1/2 tsp tahini paste / butter
- 20 gms scarmoza/ mozzarella cheese (smoked)
- 1 tsp fresh coriander, finely chopped
- 1 cup fresh rocket leaves
- 1 tsp lemon juice
- salt and pepper (to season)
- For Eggplant and Tomato chutney:
- 1 tbsp olive oil
- 1 medium eggplant
- 100 gms tomatoes, finely chopped
- 2 basil leaves, finely chopped
- 1/2 tsp red chilli powder
- salt & pepper (to season)
HOW TO MAKE IT
1. Cut the aubergine in half lengthwise and season with salt and pepper. Then sprinkle with olive oil and roast for 15 minutes at 180 degrees Celsius.
2. When the aubergine has cooled sufficiently to handle, scoop off the flesh and place it in a basin.
3. Check the seasoning and stir the tomatoes and basil with the eggplant.
4. Grill or toast the bread before spreading it with the tahini paste.
5. If necessary, reheat the leftover boneless chicken in a skillet or the oven.
6. Saute the sliced onions and bell peppers for a minute in a skillet with a little oil over high heat, then season with salt and pepper.
7. Salt, pepper, lemon juice, and olive oil the rocket leaves.
8. Pile the bread with the onions, peppers, and chicken pieces, then top with the scarmoza/mozzarella cheese.
9. Top with the rocket leaves, then cover with the remaining bread and serve with a fresh seasonal salad.

- 2 potatoes, cut into fingers, rubbed with some salt
- 4-5 Tbsp oil, to fry potatoes
- 1 Tbsp coriander leaves, chopped
- 2-3 Tbsp sauteed onions (onions boiled, chopped and sauteed in little butter)
- Black pepper powder, a pinch
- Salt, to taste
- 1 cheese slice, torn into little pieces
- 1 Tbsp oil, to cook the omelet
HOW TO MAKE IT
1. Peel and chop the potatoes, then season with salt.
2. Add 4-5 tbsp oil to a skillet and stir the potatoes until done.
3. In a mixing basin, whisk the eggs until they are frothy. Add the coriander leaves, chopped.
4. Combine 2-3 tablespoons sautéed onions, green chilies, black pepper, salt, and little chunks of cheese slices. Whisk. Incorporate the cooked potatoes.
5. Place a tablespoon of oil in a saucepan and pour in the batter. Cook for about a minute. Cook for another 2-4 minutes with the lid on. Cook from the other side.
6. Slice and serve.

Ingredients of Sloppy Joes
- 1 crusty bread loaf or 2-3 slices white bread
- 2 tbsp cheddar cheese
- For the mince:
- 1 onion
- 3 garlic cloves
- 1 green chilli
- 1 tbsp oil
- 200 gms lamb mince (keema)
- 1 tsp zeera powder
- 1 tsp rosemary
- to taste salt
- 1/4 cup red wine
- 1 cup tomato juice
- 1 potato (mashed), boiled
- coriander leaves, chopped
- 1 tomato, chopped
- For the eggplants:
- 3 baby eggplants
- 1 tsp zeera powder
- 1 tsp oil
- A pinch of salt
HOW TO MAKE IT
Prepare the eggplants:
1. Cut the baby eggplants into slices. Put them on a baking sheet.
2. Add some oil, jeera powder, and salt to taste.
3. Bake for 7-10 minutes at 200°C.
Prepare the mince:
1. Make a fine paste of the onion, ginger, garlic, and green chili in a blender.
2. In a pan, heat the oil and onion combination. Cook until the onions become pink.
3. Stir in the lamb mince. Cook until the meat begins to brown. Mix in the jeera powder, rosemary, and salt.
4. Combine the red wine and tomato juice. Allow it to diminish.
5. Incorporate the boiling potato, cooked eggplants, coriander, and tomato.
6. Cook for around 2-3 minutes.
Plating up:
1. Place 1/2 a loaf of bread (slit lengthwise) on a baking pan.
2. Drizzle with olive oil. Sprinkle some cheddar cheese on top of the mince.
3. Bake at 180-200 degrees Celsius for 10-15 minutes, or until the cheese melts.

- For the bread:
- 2 cups flour (atta or maida)
- 2 tsp yeast
- 1/2 warm water to knead

- 1/2 tsp sugar
- For the filling:
- 3 cheese slices
- 1 tomato, sliced
- 1/2 onion, thinly sliced
- 1 capsicum, thinly sliced
- 1/2 tsp garlic
- 1 tsp basil
- 5-6 olives
- 1 egg white, beaten
- Sesame seeds
HOW TO MAKE IT
1. Combine water and yeast in a mixing basin. Allow it to stand for a minute.
2. Combine the salt and sugar.
3. Combine the flour and olive oil.
4. Make a dough out of it. If necessary, add extra water.
5. Cover it with cling film and set it aside to rest and double it in a draught-free location.
6.This should take around 1-1 1/2 hours.
7.After the dough has doubled in size, roll it out into a thickish circle the size of a pizza.
8.For the fillings, begin with the cheese slices.
9.Combine the tomatoes, onions, and capsicums. Combine the garlic, basil, and olives in a mixing bowl.
10.Place these contents in the centre of the dough.
11. Fold the dough over the filling from both sides. Use some egg white to glaze it. Sesame seeds can be sprinkled on top.
12. Place this on a prepared baking sheet and bake at 180 degrees Celsius for 25-30 minutes, or until it fluffs up and turns brown.

7. Sprinkle fresh coriander leaves, spring onions, and grated cheese on top of the mixture and cook for a few minutes.
8. Fold the omelet twice.
9. Remove from the fire and place the omelet on a plate.
10. Garnish with fresh coriander and serve on a toasted baguette.
