Ingredients of Fresh Mango Kheer

  • 1.5 Litre Milk
  • 3/4 cups Rice (Tukda Chawal preferred)
  • 2 tbsp Custard Powder
  • 1 cup Sugar
  • 1/2 tsp Cardamom powder
  • A pinch of Saffron
  • 2 and a half cups Fresh mango Mousse
  • 24 tbsp Fresh mango cubes
  • 2 tbsp Almonds soaked
  • 2 tbsp Pistachio sliced
  • 3 pieces Gold leaf (optional)
  • 24 pieces Mini Gulab jamuns (optional)

HOW TO MAKE IT

1. Wash and rinse the rice many times until the water runs clear, then soak for 1 hour with inadequate water.

2. Reserve 4 tablespoons of milk for preparing a slurry with 2 tablespoons of custard powder, then pour the remaining milk into a heavy-bottomed pan or kadai and bring to a boil, then reduce to a simmer.

3. Continuously whisk the milk to prevent it from sticking to the bottom of the pan/kadai.

4. Place 2 tablespoons of boiling milk in a small basin for soaking the saffron. Set away until needed.

5. Add the strained rice to the boiling milk and cook for 20 minutes, or until the rice is thoroughly cooked and mushy.

6. Make a slurry of the custard powder and the saved 4 tbsp milk and add to the cooking rice mixture.

7. Cook for another 5 minutes before turning off the heat. Mix in the sugar, cardamom powder, and saffron milk right away.

8. Mix in half of the almonds and pistachios, reserving the other half for decoration. Transfer to a glass bowl and chill until needed.

9. Finish by making individual servings in ice cream cups. Piping cool fresh mango mousse on the bottom, followed by chilled rice kheer, fresh mango cubes, gold leaf, small gulab jamuns, and almonds! Enjoy.
