5 Quick And Hassle-Free Lunch Or Dinner Recipe

1. Cheese Chipotle Paneer Quesadilla Recipe

These quesadillas are loaded with a thick guacamole mixture, cheese, paneer, then fried till golden and melty. Serve heated with avocado guacamole and your preferred garnishing.

Ingredients of Cheese Chipotle Paneer Quesadilla

  • 90 gms Paneer diced (marinated in chipotle adobo sauce)
  • 2 tbsp Chipotles in adobo sauce
  • 1 small Yellow onion, thinly sliced
  • 3 Garlic cloves, minced
  • 1 tsp each Oregano, cumin, paprika, sugar
  • 1/2 tsp Salt
  • 1/2 tsp Pepper powder
  • 15 gms Diced tomatoes
  • 15 gms Blanched corn
  • 15 gms Red and yellow peppers, diced
  • 1 tsp Cilantro, chopped
  • For avocado guacamole:
  • 2 Small avocados
  • 1/4 cup Diced tomatoes
  • 1/4 cup Lime juice
  • 1/4 cup Fresh cilantro
  • 4-5 Pickled jalapeno slices
  • 2 Garlic cloves, minced (optional)
  • 1/2 tsp Salt
  • For quesadilla ingredients:
  • 10 Flour tortillas
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Italian cheese blend
  • 1 tbsp Butter, salted


1.Before creating the quesadilla, combine all of the guacamole ingredients in a mixing dish and keep it chunky and chilled.

2.Heat a big fry pan with a splash of oil over medium heat. After heated, place one tortilla in the pan and arrange all of the ingredients in a half moon pattern on one side of the tortilla.

3.Sprinkle the cheese and cover it in half moon using spatula. Cook for about 2-3 minutes or until golden, then carefully flip and cook another 2-3 minutes until golden and melty.

4.Serve warm with avocado guacamole and your favourite garnishing.

2. Chicken Teriyaki Recipe

Fully marinated with garlic paste, ginger paste and Teriyaki sauce, this luscious chicken is cooked gently.

Ingredients of Chicken Teriyaki

  • 120 Gram Boneless Chicken breasts
  • 1/2 tsp Garlic Paste
  • 1/2 tsp Ginger Paste
  • 2 tbsp Teriyaki Sauce
  • 1 tbsp Oil
  • 1/2 tsp Sesame (white til) seeds, roasted


1.Cut the chicken into cubes of the desired size.

2.For about an hour, marinate the chicken, garlic, ginger, and teriyaki sauce together.

3.Heat the oil before adding the chicken.

4.Sauté over high heat, till chicken is opaque.

5.Add 1-2 tbsp water and bring to a boil, then reduce to a low heat and cook until the chicken is tender, stirring occasionally.

6.Serve hot sprinkled with the sesame seeds.

3. Spicy Grilled Shrimp Recipe

This grilled shrimp dish is fast and easy to prepare and guaranteed to be the highlight of any BBQ. And, weather not permitting, the shrimp cook up great under the broiler, too.


  • 1 large clove garlic
  • 1 teaspoon coarse salt
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 2 pounds large shrimp, peeled and deveined
  • 8 wedges lemon, for garnish


Preheat a grill for medium heat.

Crush garlic and salt together in a small bowl with a fork. Mix in paprika and cayenne. Stir in olive oil and lemon juice to form a paste.

Put garlic paste and shrimp in a large bowl and toss until shrimp are equally covered.

Lightly oil the grill grate. Grill the shrimp until they are opaque, about 2 to 3 minutes per side. Transfer to a serving dish, garnish with lemon wedges, and serve.

4. Ham and Cheese Pockets Recipe

For Dough

  • 1 teaspoon active dry yeast
  • 1 tablespoon sugar
  • ⅔ cup water (lukewarm)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup butter (unsalted, melted)
  • 2 eggs

For Pockets

  • 2 cups cheddar cheese (shredded)
  • 8 slices ham (sliced medium)
  • 1 egg (beaten, for egg wash)
  • 1/4 cup Parmesan cheese (grated)
  • 1 tablespoon parsley (dried, optional)


  1. In a small dish, combine the yeast, sugar, and water and let aside for approximately 10 minutes, or until the yeast dissolves and begins to bubble.
  2. In the bowl of your mixer add the flour, salt, butter, eggs and yeast mixture and beat for about 5 minutes. The dough must be pliable but not sticky. If the dough is too sticky, add a little more flour and continue mixing until the sides of the basin are clean. Put the dough in an oiled basin, cover with plastic wrap, and set aside in a warm location to rise until doubled in size. That should take around an hour.
  3. Preheat oven to 350 F degrees. Line a baking sheet with parchment paper.
  4. Lay out the dough so that it’s about 14 inches by 18 inches and about 1/4 inch in thickness. Sprinkle the cheddar cheese over half of the dough. Lay the ham slices over the cheese. Fold the dough over the filling and if you wish you may crimp the ends together, although not really essential.
  5. Cut the dough into 8 pieces. Put the pockets on the prepared baking sheet.
  6. Brush with egg wash. Sprinkle each slice with Parmesan cheese and parsley. Let the pockets settle and rise a bit, for approximately half hour.
  7. Bake in the preheated oven for about 20 to 25 minutes or until golden brown. Serve warm.

5. Bread Pizza Recipe

This bread pizza made on the griddle is a quick, easy and tasty bread snack. The bread base mimics the pizza base with veggie toppings.


For Light Toasting Bread

  • 6 large bread slices or sandwich bread slices – whole wheat, white, multi grain or brown bread
  • olive oil or butter as required

Toppings For Bread Pizza

  • pizza sauce – as required
  • 1 medium onion – cut in small cubes
  • 1 medium capsicum – cut in small cubes
  • 1 medium tomato – cut in small cubes, optional
  • 5 to 6 olives – sliced, optional
  • oregano as required
  • dried basil as required
  • crushed black pepper or black pepper powder, as required – optional
  • 1 to 1.25 cups grated mozzarella cheese or pizza cheese – add as required
  • red chilli flakes as required – optional


Toasting Bread

  1. Heat a hefty tawa or pan or griddle. Sprinkle roughly ½ to 1 teaspoon olive oil on it. Even butter can be used in place of olive oil. Lower the flame as much as possible.
  2. Place bread slice on it. Depending on the size of the griddle, tawa, or pan, you can keep 1 to 2 pieces of bread at a time.
  3. Flip the bread after lightly toasting the base.

Making Bread Pizza

  1. Quickly spread some pizza sauce on the side that has just been lightly toasted.
  2. Add some diced small onions on top. Before you begin to make the pizza, chop all the vegetables and have them ready.
  3. Place the capsicum cubes next. Capsicum cubes should be small. Maintain the heat at its lowest setting while adding the topping.
  4. Add a few cubes of tomato on top now. Add some chopped olives as well. You can exclude the tomatoes and olives if you like.
  5. Basil and other dry herbs should be sprinkled. Add some black pepper, either in the form of ground or powder. Black pepper is an optional addition.
  6. You have the option to turn off the flame while adding the toppings.
  7. Add some shredded mozzarella or pizza cheese now.
  8. Lower the flame as much as possible. Give the bread pizza a cover.
  9. Heat the bread and cheese until both are melted.
  10. Place it on a serving platter after removing with a spatula. Depending on your preference, add some oregano or red chilli flakes.
  11. Serve hot Bread Pizza alone or with pizza sauce or tomato ketchup.
