  • 120 gms french beans (strung) , blanched
  • 120 gms bottle gourd (grated), peeled
  • 120 gms cauliflower, grated
  • 1/2 cup carrots, grated
  • 1 cup potatoes (mashed), boiled
  • 1 tsp cumin seeds
  • 2 tsp ginger, finely chopped
  • 2 tsp coriander powder
  • 2 tsp amchoor
  • 1 1/2 tsp salt
  • 2 tsp green chillies, finely chopped
  • 2 Eggs (slightly beaten)
  • 1/2 cup refined flour
  • Dried bread crumbs to coat the cutlets
  • 1 tbsp oil

HOW TO MAKE IT

1. Finely chop the beans.

2. Add cumin and ginger to 2 Tbsp of hot oil.

3. Stir-fry until everything is thoroughly combined, then add the beans, gourd, cauliflower, and carrots. Stir over high heat to remove any remaining liquid.

4. Add the coriander, amchoor, salt, and pepper. After a few quick rotations, turn off the heat.

5. After cooling, combine the potato.

6. Create cutlets that are circular or oval.

7. Before dipping the cutlets in the beaten egg, dust them with finely ground flour.

8. Next, sprinkle on the crumbs.

9. Continue by re-dipping the crumbs-crusted cutlets in the egg.

10. Deep-fry the cutlets until golden and then plate them.

  • For Bread Basket:
  • 6 thick slices Bread (white/brown)
  • Butter
  • For Chana Chaat:
  • 1 cup Chana, boiled
  • 1 medium Onion, finely chopped
  • 1 medium Tomatoes, finely chopped
  • 1 tsp Cumin seeds
  • 1 tsp Ginger garlic paste
  • 2 tsp Chilli powder
  • 1 tbsp Chana Masala
  • 1/2 tsp Turmeric powder
  • 2 tsp Oil
  • to taste Salt

HOW TO MAKE IT

Prepare Bread Basket:

1. Cut the bread pieces into circles after trimming the edges.

2. Straighten and slightly roll out the bread rounds.

3. Spread butter on the bread’s two sides.

4. Gently press them into the muffin tins.

5. Bake the bread for 11–13 minutes with the oven preheated to 190 degrees Celsius. Until they are only golden brown.

6. Immediately transfer to a wire rack for chilling.

Prepare Chana Masala/Chana Chaat:

1. Add the cumin seeds to the heating oil in the pan, then add the chopped onions and cook for 2 minutes. Then stir in the ginger-garlic paste and cook until the raw smell disappears.

2. Add the diced tomatoes and continue to sauté them until they are tender.

  • 1 tomato, chopped

HOW TO MAKE IT

1. Add the mustard seeds to the hot oil in a small saucepan. Add the onion and peppers once they have popped, and sauté for a minute.

2. After that, add the salt, cumin, sugar, and turmeric and continue to sauté for another minute. Yogurt and lemon juice should be added, and stirring should continue.

3. Gently fold the bread in at the end to prevent excessive crumbling.

4. After cooking for 2 more minutes, garnish with chopped tomato and coriander before serving.

5. Mushroom Masala Toast Recipe

  • 1/2 tsp turmeric powder

  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 300-400 ml water
  • 1 tomato, chopped
  • 1 Tbsp sugar
  • 6 bread slices
  • 250 gm chopped mushrooms
  • Salt to taste
  • 1 Spring onion, chopped
  • 1 tsp butter
  • 1/2 slice lime juice

HOW TO MAKE IT

1. In a skillet, heat some refined oil and add the cumin seeds, Kashmiri chilies, chopped garlic, and julienned onions.

2. In a pan, combine a little water with powdered spices such as turmeric, red chili, coriander, and cumin.

3. Sauté them together before moving them to a pan side.

4. Combine chopped tomato and sugar in a pan.

5. Sauté them together with the other spices and flavorings.

6. Continue toasting the bread in the oven at 180 degrees Celsius for 10 minutes.

7. Add 250 grams of mushrooms and season them after moving the aromatics and spices to the side of the pan.

8. create chopped spring onions to the mixture as you sauté it to create crunch and color contrast.
