Biscuits and Gravy

Buttery, flaky, home-made biscuits with a straightforward sausage gravy on top. You may also use biscuits from the shop.

INGREDIENTS

Biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 6 tablespoons unsalted butter very cold
  • ¾ cup whole milk cold

Gravy

  • 1 pound sage flavored pork breakfast sausage
  • ¼ cup all-purpose flour
  • 2 ½ cups whole milk
  • ⅛ teaspoon crushed red pepper optional

HOW TO MAKE IT

Biscuits

  1. Before starting this dish, cool your butter in the freezer for 10 to 20 minutes for the best results. For airy, flaky, buttery biscuits, the butter should be extremely cold.
  2. Set your oven to 425°F and cover a cookie sheet with parchment paper that is nonstick. Place aside.
  3. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  4. When using a pastry cutter, remove the butter from the freezer and incorporate it into the flour mixture until the mixture resembles coarse crumbs.
  5. Use a spoon to gently whisk the flour mixture after adding the cold milk (do not overmix since you do not want to overwork the dough).
  6. Use your hands to gently knead the biscuit dough by transferring it to a clean surface that has been dusted with flour. Add flour until the dough is workable if it is too sticky.
  7. When the dough is cohesive, flip it over on itself and gently press it flat with your hands. Repeat this process 5–6 times, being careful not to overwork the dough (this will help give your biscuits flaky layers), rotating the dough 90 degrees each time you fold it in half.
  8. Spread the dough out using your hands until it is 1″ thick.
  9. Drop the biscuit onto the baking sheet that has been prepared by pressing a 2 34″ broad biscuit cutter straight down into the dough and creating precise cuts.
  10. Place biscuits on baking sheet no more than 12″ away from one another and repeat as necessary to get as many as you can.
  11. After you’ve carefully reworked the dough to cut out another cookie or two, repeat this process until you have at least 7 biscuits.
  12. Place in the oven, and bake for 10 to 12 minutes at 425°F, or until the tops are starting to become a very light golden brown.
  13. While the biscuits are baking, make your gravy.

Gravy

  1. Heat a pot with the sausage on medium-high. Cook the sausage, breaking it up as it cooks, until no pink is visible. Pour no water into the skillet.
  2. The 14 cup of flour should be distributed equally over the crumbled sausage. Cook for one more minute to let the flour to soak.
  3. Pour the milk into the skillet slowly while stirring. if using, add some red pepper flakes.
  4. Stirring often, cook until sauce thickens.
  5. When the biscuits are done baking, split them in half, top with gravy, and serve!

2 INGREDIENT BAGELS

There are only two ingredients and less than an hour required to prepare these quick homemade bagels.

INGREDIENTS

  • 1 cup nonfat plain Greek yogurt
  • 1 cup self-rising flour or mix 1 cup all purpose flour + 1 1/2 tsp baking powder + 1/2 tsp table salt

FOR THE TOPPINGS

  • 1 egg whisked (for egg wash finish)
  • white sesame seeds

HOW TO MAKE IT

  1. Set the oven to 350°F.  Use silicone baking mats or parchment paper to line a large baking sheet.
  2. Add yoghurt and flour to a big bowl. Make sure to drain off any liquid before measuring the yoghurt. The dough will be overly moist if your yoghurt has any additional liquid in it.
  3. Flour and yoghurt should be combined with a big spoon or spatula until a crumbly dough forms. The dough should be rolled into a ball using your hands. It will be a very sticky dough.
  4. Using the dough hook attachment on a stand mixer, add your dough. Knead the dough until it forms a single ball and starts to pull away from the mixing bowl’s sides. When it reaches this point, it is prepared, and you should turn off the mixer right away. (You may see my video above for reference). The dough will really return to its previous sticky state if you let it continue to knead. The dough may be worked by hand if you don’t have a stand mixer. The dough has to be hand-kneaded until tacky and no longer sticky, covering your work surface with flour as you go. Because it is quicker and the dough comes together without the extra flour, making for a lighter bagel, I prefer using the stand mixer.
  5. Make four equal balls of dough. On a surface that has been lightly dusted with flour, roll out a ball into a rope that is approximately 3/4 inch thick. Make an effort to evenly and smoothly weave the rope. Close the ends with a pinch to create a round. Use the leftover dough to repeat.
  6. On a baking sheet, arrange the bagels. Use egg wash to brush the tops. Tops should be seasoned whatever you choose.
  7. Bagels should be baked for around 23 to 25 minutes, or until completely done. Take the bagels out of the oven and raise the temperature to 500°F. Reopen the oven and bake the bagels for another 2 to 3 minutes, or until the tops are golden. (If you are preparing plain bagels without toppings, you may also put your oven to low broil for 2-3 minutes to brown the bagels. However, I don’t recommend doing this if you have toppings since the toppings will begin to burn before the bagels are fully browned.) Before eating, allow bagels to cool for a few minutes.

  • 1 teaspoon kosher salt

  • 1⅔ cups milk
  • 2 eggs
  • ⅓ cup butter, melted
  • 1 teaspoon vanilla extract

Gluten-Free Alternative

  • 1⅓ cups brown rice flour
  • ⅔ cup tapioca starch
  • ¼ cup potato starch

HOW TO MAKE IT

  1. Warm up the waffle maker. In a medium-sized mixing basin, combine the flour, salt, baking powder, and sugar. Add the eggs and milk. Combine by whisking. Blend the batter till fairly smooth before adding the melted butter and vanilla.
  2. Cook as directed by the manufacturer by pouring onto a hot waffle iron. Serve hot or allow to totally cool.

Notes

Waffles that have totally cooled should be frozen in zip-top bags. Toast or reheat in the microwave after being frozen.
