A nutritious low-fat black bean salad is made by the weekly Guilt Free contest winner. You don’t enjoy black beans. Replace it with chickpeas or red kidney beans if necessary.

Ingredients of Black Bean Salad

  • 1 can (15 oz) cooked black beans
  • 1/2 cup onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1/2 cup of corn, boiled
  • 1 Tbsp of jalapenos, Chopped
  • 1 Tbsp of goya adoba all purpose seasoning
  • 1 Tbsp of goya sazonador total seasoning
  • Dash of Pepper
  • Dash of salt
  • 2 Tbsp of lemon juice
  • 1 Tbsp of olive oil or chipotle mayonnaise
  • To Garnish:
  • 1 green onion, finely chopped
  • 2 Tbsp of cilantro, finely chopped


1. Microwave the corn for two to three minutes.

2. Combine and thoroughly combine all the ingredients in a big basin.

3. Cover it and refrigerate it for 15 to 30 minutes.

4. Add chopped cilantro and green onion just before serving.

A healthful burger with a patty created from a combination of black beans, seasonal vegetables, and other seasonings.

Ingredients of Black Bean Burger with Hung Curd Spread

  • 1 cup black bean
  • 250gm arbi, boiled
  • 1/2 cup corn kernels, boiled
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp ginger garlic paste
  • 1 tsp red chilli flakes
  • 1 Tbsp melted butter
  • 1 egg
  • 1 cup bread crumbs
  • Salt and pepper to taste
  • 2 multi-grain burger bun
  • For the Hung Curd Spread
  • 200ml curd
  • 1 Tbsp chopped garlic
  • 1/4 cup chopped parsley


1. Black beans should be soaked the night before being pressure cooked for three whistles. Separate into two halves. Keep one component as is and blend the other.

2. Mash the arbi in a large mixing basin, and then combine it with the remaining ingredients. Patties should be formed, then set aside.

3. Heat the oil in a skillet, then cook the patties until crisp and brown on both sides.

4.4 To prepare the hanging curd spread, wrap the curd in a muslin towel and hang it for 30 minutes to let the whey drain. After that, combine it with garlic and parsley in a mixing dish.

5.5 Split the hamburger bread in half. Place the burger patties on top of a thick layer of the hung curd spread. Add some fresh lettuce or baby spinach on top before serving.

Mixed Bean Stuffed Tomatoes Recipe

Ingredients of Mixed Bean Stuffed Tomatoes

  • 1/2 cup green beans cooked and chopped
  • 1/2 cup cluster beans cooked
  • 1/2 cup kidney beans cooked
  • 1/2 cup black beans cooked
  • 1/2 red onion diced
  • 4 medium tomatoes
  • 20 gm corn kernels
  • 5-8 black olives
  • Few leaves basil
  • Juice of 1/2 a lime
  • 2 Tbsp olive oil
  • Few leaves oregano
  • 100 gm grated mozzarella or cheddar cheese


1. Select red, juicy, plump tomatoes.

2. Cut the top.

1. Sauté peppers, onions, and green chilies in olive oil for two minutes.

For the bean puree:

1. Add the kidney beans and black beans after the onions and garlic have been sauteed for a while.

2.Season with jeera powder and salt.

3.Top with coriander leaves.

4. Stir in the tomato puree.

5.Blend this mix to make the bean puree.

6. Grill the tortillas or heat them in a pan.

7. Spread the tortillas with the bean purée.

8. After that, scatter the pepper-and-onion mixture.

9.Place the tortillas one on top of each other as though to construct a sandwich.

10.Fry in a pan until nice and crispy.

11.Cut the tortilla sandwich into triangles and serve with the sour cream dip.

For dip:

  1. Whip up the sauce, add the sour cream, lemon juice, Mexican chilli powder, salt, coriander, and red pepper puree, and then serve it over the quesadilla.
