HOW TO MAKE IT
1.Brush the insides of your ramekins with butter and sprinkle with cocoa powder. Place them in the freezer to firm up.
2.Place another bowl over a pan of simmering water that fits snugly without touching the water. Melt the chocolate and butter together slowly. Let the bowl to cool for 5 minutes after removing it from the heat.
3.In a separate dish, whisk together the eggs, yolks, and sugar until the whisk leaves a trail. Add the flour, oats, and baking soda to the eggs and mix thoroughly.
4.Incorporate the melted chocolate into the mixture in small batches, mixing thoroughly after each addition. To loosen the batter, add a splash of milk.

HOW TO MAKE IT
1.Preheat oven to 325°F and adjust oven rack to lower-middle position.
2.In a small mixing bowl, combine the flour, salt, and baking powder. Set aside.
3. Coat an 8-inch baking dish with cooking spray.
4.Place a layer of foil in the pan and up two sides to act as a handle to remove the baked brownies (Parchment paper/butter paper may also be used).
5.Spray the baking sheet with cooking spray.
6.In a medium dish, melt chocolate and butter over a pan of boiling water.
7.Remove from heat and mix in the sugar and vanilla extract.
8.Whisk in the eggs one at a time, completely integrating each one before proceeding.
9. Whisk until the mixture is absolutely smooth and shiny.

14.Serve cut into squares. If not serving right away, do not cut the brownies. The entire brownie cake may be covered in plastic wrap, then foil, and stored in the refrigerator for up to five days.

2.In a double boiler, melt the chocolate, whipping cream, and sugar.
3.Place the chocolate, whipping cream, and sugar in a metal bowl set over a pot of boiling water, making that the bottom of the dish does not contact the water.
4.Reduce the heat to low and melt the chocolate, stirring regularly to prevent it from burning.
5.Add the cinnamon, chilli powder, and rum to the mixture in a fondue pot.

HOW TO MAKE IT
Method for Crust:
1.Preheat the oven to 180 degrees Celsius and place a rack in the centre. Lightly grease a 10-inch tart pan with a detachable bottom.
2.In a food processor, combine the sugar and walnuts until the walnuts are finely crushed.
3.Pulse in the flour, cocoa, and salt until thoroughly combined. Pulse in the butter until the mixture comes together. Don’t overthink it.
4.Press the dough into the bottom and up the edges of the tart pan in a uniform layer. Using a fork, prick the dough all over.
5.Bake for 15-18 minutes, or until the crust begins to come away from the pan sides.
6.Set aside to cool on a wire rack while you prepare the filling.
Method for Filling:
1. Melt the chocolate in a heatproof dish put over a pot of simmering water, stirring constantly until melted.
2.Mix in the butter and cream until smooth. Remove the bowl from the heat and whisk in the eggs and sugar until fully combined.
3. Stir in the vanilla extract.
4.Place the heated crust on top of the filling.
5.Bake for 12-13 minutes, or until the filling is set around the edges but still jiggly in the centre.
6.The top of the tart will seem burned.
7.Transfer to a wire rack and chill for at least 1 1/2 hours.
8.You may alternatively chill it for an hour before serving it at room temperature.

- 2 1/4 Cups cashew nuts
- 1 cup sugar
- 100 ml water

HOW TO MAKE IT
1.To begin creating the Chocolate Kaju Katli, first process the cashew nuts into a fine powder in a blender.
2.In a heavy-bottomed pan, combine the sugar and water. Bring everything up to a boil over medium heat. After the sugar has completely dissolved, reduce the heat and allow the liquid to simmer for a few minutes, or until it achieves a one-string consistency.
3.To see whether it’s the appropriate consistency, place a few drops of syrup on a clean plate, allow it to cool for 15-20 seconds, and look for the development of a single thread between your thumb and index finger.
4.When the syrup has achieved the consistency of a single thread, add the powdered cashew nut powder and stir continuously for 4-5 minutes. The mixture will gradually thicken into a paste.
5.Remove the mixture from the heat and set aside to cool to room temperature. As soon as the mixture has cooled slightly, lubricate your palms with ghee and begin kneading it. Knead it until it is smooth, consistent, and the consistency of dough.
6.Now, cover the counter with a layer of butter paper. Put the dough on it and uniformly roll it out with a rolling pin to a thickness of 5-6 mm.
7.Bring a pot of water to a boil. Melt the chocolate in a heatproof dish over it. The heat created by the boiling water beneath will gradually melt the chocolate. Make sure the boiling water does not come into contact with the heatproof bowl.
8.When the chocolate has completely melted, pour it over the rolled kaju katli dough and distribute it evenly with a spatula.
9.Let it cool for a few minutes before transferring it to a surface and refrigerating it for 15-20 minutes/ 10.When the chocolate has hardened, cut the chocolate kaju katlis into signature diamond shapes by forming intersecting diagonal lines.

- 1 Cup Chickpeas
