  • 1 pound (450g) ground breakfast sausage
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cups (300g) frozen hash browns
  • 1 cup (120g) shredded cheddar cheese
  • 8 large eggs
  • 1 cup (240ml) milk
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, for garnish (optional)

HOW TO MAKE IT

  1. In a large skillet over medium heat, brown the ground sausage until cooked through. Drain any excess fat and transfer the sausage to a plate lined with paper towels to remove additional grease.
  2. In the same skillet, sauté the diced onion and bell pepper until they begin to soften, about 5 minutes. Remove from heat.
  3. Grease the inside of a 6-quart (or larger) slow cooker with non-stick cooking spray.
  4. Layer half of the frozen hash browns on the bottom of the slow cooker, followed by half of the cooked sausage, sautéed onions and bell peppers, and shredded cheddar cheese.
  5. Repeat the layering process with the remaining hash browns, sausage, onions, peppers, and cheese.
  6. In a large bowl, whisk together the eggs, milk, dried oregano, garlic powder, salt, and black pepper until well combined.
  7. Pour the egg mixture evenly over the ingredients in the slow cooker.
  8. Cover the slow cooker and cook on low heat for 4-6 hours or on high heat for 2-3 hours, or until the eggs are set and cooked through.
  9. Once cooked, carefully remove the lid and let the casserole cool for a few minutes before serving.
