- 1 ripe avocado, sliced
- 4 slices of turkey bacon (or your preferred lean protein)
- 4 slices of tomato

- Salt and pepper to taste
- Cooking spray or olive oil for frying
HOW TO MAKE IT
- Preheat your oven to 350°F (175°C). Split the English muffins in half and place them on a baking sheet. Toast the muffins in the oven until they are golden brown and crisp, usually around 5-7 minutes.
- In a non-stick skillet, cook the turkey bacon over medium heat until it becomes crispy. Set aside.
- In the same skillet, lightly coat it with cooking spray or a drizzle of olive oil. Crack the eggs into the skillet and cook them to your preferred level of doneness (fried, scrambled, or poached). Season with salt and pepper to taste.
- Once the English muffins are toasted, remove them from the oven. On the bottom half of each muffin, place a slice of tomato, followed by a slice of cheese, a cooked egg, avocado slices, and finally a slice of turkey bacon.
- Place the top half of the English muffins on each sandwich, creating a delightful breakfast sandwich stack.
