  • For the curry:
  • 2 tbsp Refined oil
  • 6 Cloves
  • 3 Cardamoms
  • 1 stick Cinnamon
  • 1/2 tsp Cumin seeds
  • 3 tbsp Onions, chopped
  • 1 tsp Ginger garlic paste
  • 100 gram Gongura leaves
  • 1 tbsp Red chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 10 Curry leaves
  • 6 Slit green chillies
  • Coriander leaves, chopped
  • 50 ml Water
  • 1 1/2 tsp Salt
  • Red chilli, curry leaves, fried
  • Clarified butter

HOW TO MAKE IT

1.Bring the beef to a boil with the turmeric powder, salt, and ginger garlic mixture, and set aside.

2.Now heat the oil in the pan.

3.Stir in the cloves, cardamom pods, cumin seeds, and chopped onions.

4.Saute the onions until they become transparent.

5.Next, add the ginger garlic paste, gongura leaves, red chilli powder, coriander powder, turmeric powder, curry leaves, sliced green chilies, chopped coriander leaves, cooked meat, water, and salt.

6.Combine well and cook for 5 minutes.

7.Top with fried red peppers, curry leaves, and clarified butter.

8.Serve immediately with rice.

2. Military Mutton Curry Recipe :

  • Preparation of the Curry
  • 3-4 tbsp Oil
  • 1 Cinnamon Stick
  • 2 Black Cardamoms
  • 4 Green Cardamoms
  • 10 Peppercorns
  • 2 Bay Leaves
  • 3 Onions (sliced)
  • 1 litre Water
  • Salt (as per taste)
  • 1 cup Coriander Leaves
  • Green Chillies Paste
  • 2 tbsp Ghee

HOW TO MAKE IT

1.Grind the green chilies, garlic, and ginger into a coarse paste and set aside.

2.In a separate mixer jar, create a fine paste of coriander leaves and green chilies; set aside.

3.Coat the mutton with the ginger-garlic-green chilli mixture, curd, and the remaining ingredients. Let it to sit for an hour.

4.Heat the oil and sauté the cinnamon, black cardamom, green cardamom, peppercorn, bay leaves, and onions. Fry the onions till golden brown.

5.Saute the marinated meat over high heat. Season with salt and add water. Let it to come to a boil.

6.Add the paste of coriander and green chilies. Finish with some ghee.

  • 5 Mathania whole red chilly
  • 200 gms onions, sliced
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric paste
  • 2 tsp Mathania (red chilli) paste
  • to taste salt
  • 200 gms yogurt
  • for garnishing coriander sprig
  • for garnishing lemon wedges
  • 1 inch stick cinnamon
  • 1 Bay leaf

HOW TO MAKE IT

1.Heat the oil in a nonstick pressure cooker, then add the black and green cardamoms, cinnamon, cloves, whole mathania (red chilli), and bay leaf and sauté until aromatic.

2.Add the onions and cook until they turn light brown. Then sauté for 5 minutes with the remaining ginger garlic paste.

3.Add the lamb chunks to the onions and cook for 10-15 minutes on high heat, or until the meat is thoroughly charred.

4.Saute for 10 minutes with turmeric powder, mathania (red chilli) paste, and salt.

5.Whisk the yoghurt into the meat and sauté for 10 minutes on medium heat, then reduce to a simmer (low heat) and allow the mutton cook gently. If necessary, add a little water or stock at any step. Season to taste.

6.Transfer the cooked lamb to a serving bowl and decorate with coriander sprigs and a lemon slice. Serve immediately.

HOW TO MAKE IT

1. Combine the mutton, salt, cinnamon, cardamoms, and cloves in a mixing dish. These should be rubbed all over the meat.

2. Place the seasoned mutton and 2 cups of water in a pressure cooker. Cook the mutton until it is halfway cooked.

HOW TO MAKE IT

1.Place the mutton pieces in a saucepan. Combine the ginger garlic paste, brown onion, oil, and salt in a mixing bowl.

2.Add water and simmer until the meat is tender.

3.In a skillet, heat the ghee and add the chopped onion, garlic, ginger, and green chilies.

4.Sauté till light brown, then add the cooked meat.

5.Combine the diced tomato and all of the powder spices.
